The prestigious Geelong Grammar has a kitchen and catering program that matches its esteemed alumni. The co-educational Anglican school has a food program that is far removed from the sort of menu that one might associate with traditional educational cuisine and this is all thanks to Alliance Catering.

Alliance Catering specialises in onsite catering for the education, business and aged care markets and the team at Geelong Grammar includes six
chefs and thirty catering staff  preparing and serving over two thousand meals to around seven hundred students.

Andrew Lamb, Geelong Grammar and Alliance Catering’s Site Operations Manager, enlisted the services of Comcater to help him find the school a high quality blast chiller/freezer.

Andrew Lamb explains that the initial and most important reason for purchasing a Tecnomac blast chiller/freezer, from Comcater, was to meet stringent food safety guidelines.

As well as greatly improving Geelong Grammar’s food safety program, the new Tecnomac T30 model roll-in blast chiller/freezer has improved
the team’s processes. “The Tecnomac has enhanced our workflows considerably,” explains Andrew. “It speeds up our general cooking and chilling procedure which allows more time for our chefs to prepare meals for students with special dietary requirements.”

TheTecnomac T30 is a roll-in model that allows Alliance’s chefs to simply wheel trolleys out of the Rational SelfCooking Centers and straight into
the blast chiller/freezer.

Andrew’s most glowing endorsement is that the blast chiller/freezer preserves the integrity of the food. The school is moving towards preparing cafe and restaurant quality meals such as roast lamb, pork cutlets, chicken breasts and veggies and the quality is maintained by blast chilling and freezing.
