Michael Fletcher began his career around thirty five years ago as an apprentice chef at The Queensland Cricketers Club at the Gabba before travelling the world to further develop his culinary skills.
Fletch's latest position is as Director with Evolution Facility Management (EFM), a role that combines catering, accommodation, security, garden maintenance, water & waste management and provides innovative and specialised solutions in catering and accommodation services to remote of locations, such as mining site facilities.

When asked about the challenges faced by the business there is no doubt that the greatest challenge is delivering products to remote sites while maintaining freight expenses.
For Michael the principle focus for Evolution Facility Management is delivery the hospitality culture to the outback as well as promoting a healthy lifestyle by following the guidelines recommended by Food Standards Australia New Zealand and Nutrition Australia.
EFM provides innovative catering and accommodation services, using 21st century technology and operating equipment to provide outcomes that are presently unmatched in industry and Fletcher is proud of the accolades and feedback received from his clients.
Michael has used Comcater equipment for many years throughout career including Rational, Garland Master Series and Cleveland Kettles while at The Gold Coast
Convention Centre which he explained worked fantastically. He also had the opportunity to use the original Garland Master Series cooking equipment that was installed at the Jupite's Casino twenty five years previous.
EFM choose to use Comcater as the mine site locations are extremely remote and the business needs equipment that is reliable and can stand the test of time as we can’t afford to have it break down.
Fletcher explained that his most valuable pieces of equipment are the Rational SelfCooking Centers, extra heavy duty Garland Master Series of cooking ranges, high performance Frymaster fryers and of course Tecnomac blast chillers/freezers.
This high tech kitchen equipment has been created to improve the speed of service and all of the pieces are greatly valued by Evolution Facility Management.
